This past week has been a bit slow for me…I returned home safely from Cinque Terre and London. It was an amazing adventure; however, it’s taken me longer than usual to recover from jet lag.

My favorite dishes to cook must comprise depth and layers of flavor, can be prepared in 45 minutes or less, and utilize easy to source ingredients. I can’t wait to try the Greek Salad by Eva Kosmas Flores, what a lovely side dish.
